I have liked using Ubuntu but I haven't tried any others for a while.  I am actually spending more time using BSD on Mac.  That's probably not what you were looking for but since I started using OSX since earlier this year, I like it more and more.  So much that I just got my MacBook Pro delivered yesterday.
